PASADENA, CA, 28 October 2018 – To claim “supremacy” in the world of yeast is no easy task. For starters (no pun intended), bakers take great pains before switching their yeast. The science behind it is intriguing, and Dr. Tom Jondiko, Director of Ingredient Formulations here at Bellarise®, gives us a quick look at how the world’s most potent Red IDY works.
“In order to deliver up to 30% more gassing power and 15% shorter proof times than any other Red IDY,” says Dr. Jondiko, “we identified the perfect strain of yeast with the perfect amino acid sequences that could withstand any number of processing conditions, and could sustain its activity over a longer period of time without being denatured.” Its ability to work well with other ingredients in a lean dough (which typically contains less than 6% sugar), and that it remains active and shelf stable for a longer period of time helps explain its superior performance.
“When yeast is exposed to a certain amount of heat during the baking process, its activity reaches a peak, then begins to decline; our Bellarise® Supreme IDY, however, yields more CO2 and thus more gassing power for a longer time as the temperature rises, while other yeasts begin to lose functionality in comparable conditions. Similarly, this leads to shorter proof times. Bellarise® Supreme IDY also responds better to variations in both dough pH and moisture. So, our strain is more adaptive to a variety of baking conditions when compared to other yeast strains, resulting in superior overall performance.” With that adaptability and higher activity, Bellarise® Supreme IDY makes commercial and industrial bakers’ lives a lot easier. Bake times are shortened, baking processes are simplified and more consistent, and production costs go down. The advantages are pretty significant.
How the yeast achieves its “supreme” qualities comes down to our own, proprietary methods of cultivating yeast. “Our yeast is non-GMO and a proprietary strain, and fed nutrients of the most consistent and highest quality, at the right intervals. And when you look at our yeast closely, the size of the yeast granule itself is very consistent and uniform from one to another. This uniformity also ensures better, more even distribution in the dough. All in all, ensuring all of this is a more laborious and precise approach, surely, but we pride ourselves on taking extra steps to ensure the best quality for our customers.” The phrase you are what you eat certainly comes to mind here.
